Well, first off sometimes they wont But even so the legend rule does apply, sometimes thats okay to copy a legendary creature if it has some sort of trigger you want to take advantage of, and at a bare minimum you are using Jaxis to cycle away a card in your hand since the copy it makes will draw you a card when it dies
